Chicken Cordon Bleu
Boneless chicken
Flour
eggs
bread crumbs
swiss cheese
- put chicken in flour
- put chicken in eggs
- put chicken in bread crumbs
- pan fry each side till brown(if larger chicken dont pan fry)
- put in oven for 15 mins @ 350
Make sure the temp of the chicken is 165 or higher
Hollandaise Sauce (http://www.foodterms.com/encyclopedia/hollandaise/index.html): - 4 egg yolks
- Pinch fine salt
- Pinch white pepper
- Pinch paprika
- 1/4 teaspoon lemon juice
- 1/4 teaspoon hot sauce
- 1 pound clarified butter (http://www.foodterms.com/encyclopedia/clarified-butter/index.html), warmed until soft
- Oil, enough for deep-frying
Directions Preheat oven to 350 degrees F.
Take a piece of chicken and place 2 ounces ham and 1-ounce Gruyere cheese in the middle. Roll up the chicken breast tightly and place toothpicks in the ends and middle. Place the chicken breasts (http://www.foodterms.com/encyclopedia/chicken/index.html) in an oiled baking dish and bake at 350 degrees F for 18 minutes.
For the breading: Combine all ingredients, mix well, and place on a large platter.
