 Ritz Broccoli Casserole

 
3 packages(10oz.each)frozen chopped broccoli, thawed& drained
¾ pound(12 oz.) velveeta pasteurized prepared cheese product cut up
36 ritz crackers, coarsely crushed divided
¼ cup( ½ stick) butter or margarine melted

 
Directions

 
 
  • Preheat oven to 350
  • Mix broccoli, velveeta and half of the crushed crackers until well blended.
  • Spoon into 2 quart baking dish. Mix remaining crushed crackers & butter; sprinkle over broccoli mixture
  • Bake 45 mins.or until heated through

 INGREDIENTS
 
  • 1 envelope Lipton® Recipe Secrets® Onion Soup Mix
  • 4 medium all-purpose potatoes, cut into large chunks (about 2 lbs.)
  • 1/3 cup vegetable oil


DIRECTIONS
Preheat oven to 425°. Combine all ingredients in 13 x 9-inch baking or roasting pan.
Bake, stirring occasionally, 35 minutes or until potatoes are tender and golden brown.

 Velveeta Down-Home Macaroni & Cheese
¼ cup (1/2 stick) butter or margarine, divided
¼ cup flour
1 cup milk
½ lb. (8 oz.) Velveeta pasteurized prepared cheese cut into ½ inch cubes
2 cups elbow macaroni, cooked, drained
½ cup Kraft shredded cheddar cheese
6 Ritz crackers, crushed


 
Directions
 
  • Heat oven to 350 F
  • Melt 3 Tbsp. butter in medium saucepan on medium heat.
  • Whisk in flour, cook 2 mins., stirring constantly.
  • Gradually stir in milk; cook until mixture boils & thickens, stirring constantly
  • Add Velveeta; cook 3 mins.or until melted, stirring frequently.
  • Stir in macaroni
  • Spoon into 2-qt. casserole sprayed with cooking spray; sprinkle with cheedar.
  • Melt remaining butter; toss with crackers crumbs.
  • Sprinkle over casserole
Bake 20 mins. Or until heated through

 Ultimate Velveeta Nachos

1 pound extra-lean ground beef
7 cups(6 oz.) tortilla chips
½ pound (8 oz.) velveeta pasteurized prepared cheese product cut into ½ inch cubes
1 cup shredded lettuce
½ cup chopped tomatoes
¼ cup sliced pitted ripe olives (optional)
1/3 cup sour cream

Directions
 
 
  • Brown meat; drain
  • Arrange chips on microwaveable platter; top evenly with velveeta microwave on high 2 mins.or until velveeta is melted.
  • Top with meat & remaining ingredients

 Drunken Doggies
1 cup of ketchup
1 cup of whiskey
1 tsp. Dijon mustard
1/3 cup brown sugar
1 tsp. Salt
1 tsp. Pepper
1 tsp. Onion powder
1 package of little hotdogs

 
 
  • mix well until blended
  • simmer for about 2 hrs. in crock pot

My Favorite!!!!


Chicken Cordon Bleu
Boneless chicken
Flour
eggs
bread crumbs
swiss cheese


 
 
  • put chicken in flour
  • put chicken in eggs
  • put chicken in bread crumbs
  • pan fry each side till brown(if larger chicken dont pan fry)
  • put in oven for 15 mins @ 350
    Make sure the temp of the chicken is 165 or higher
Hollandaise Sauce
  • 4 egg yolks
  • Pinch fine salt
  • Pinch white pepper
  • Pinch paprika
  • 1/4 teaspoon lemon juice
  • 1/4 teaspoon hot sauce
  • 1 pound clarified butter, warmed until soft
  • Oil, enough for deep-frying
Directions Preheat oven to 350 degrees F.
Take a piece of chicken and place 2 ounces ham and 1-ounce Gruyere cheese in the middle. Roll up the chicken breast tightly and place toothpicks in the ends and middle. Place the chicken breasts in an oiled baking dish and bake at 350 degrees F for 18 minutes.
 For the breading: Combine all ingredients, mix well, and place on a large platter.

 Texas Hold-Ums Mini-burgers Ingredients
  • 2 pounds ground sirloin
  • 1 medium onion, peeled and cut in 1/2
  • 2 tablespoons Worcestershire sauce, eyeball it
  • 2 chipotles in adobo and 2 tablespoons of adobo sauce
  • 2 tablespoons grill seasoning, a couple of palm fulls, (recommended: Montreal Steak Seasoning by McCormick)
  • 1 tablespoon extra-virgin olive oil, plus some for drizzling
  • 3 cloves garlic, finely chopped
  • 3 tablespoons brown sugar
  • 1/4 cup vinegar
  • 1 (15-ounce) can crushed fire roasted tomatoes, about 2 cups
  • Salt and pepper
  • 12 slices, 1/2-inch thick, brick-cut smoked Cheddar or sharp Cheddar, (recommended: Cabot), optional
  • 12 small round rolls, split
  • (Many markets sell mini Keiser rolls or use dinner rolls in any flavor you like)
Directions Preheat grill pan to high.
Place the meat in a bowl. Cut the onion in half. Grate half the onion into the meat using the small grate on a box grater. Chop and reserve the other half onion. Add Worcestershire, chipotles and sauce and grill seasoning to burgers. Drizzle a little extra-virgin olive oil over the bowl and mix meat. Score the meat into 4 sections. Make 3 mini-burgers, each 3 inches wide, 1-inch thick, from each half-pound of meat.
Heat a small sauce pot over medium heat. Add extra-virgin olive oil and garlic. Cook garlic 2 to 3 minutes then add sugar and vinegar, cook 2 minutes more and stir in tomatoes. Season sauce with salt and pepper and allow it to reduce 5 to 6 minutes more.
Grill meat 2 to 3 minutes on each side and top with cheese, if you like.
Place burgers on buns and top with raw chopped onions and warm fire roasted ketchup and serve.

BBQ Sauce


 Homemade Bbq Sauce
1 can coke
½ stick butter
2 cups worcheshire
1¼ cups of ketchup
4 tsp. Sugar
1 tsp. Salt
1 tsp. Pepper

 
 
  • put all in a pan
  • stir together
  • cook on high, let come to a boil
  • turn on low and simmer till you are ready for it
  • enjoy
    You can always decrease ingredients if need to

Serves: 4 servings


Ingredients

1 pound boneless top round, trimmed
1 1/2 cups buttermilk
2 cups all-purpose flour
Salt and freshly ground black pepper
3 eggs
1/4 cup milk
2 cups crushed butter crackers (recommended: Saltine)
1 1/2 cups panko bread crumbs
1 cup canola oil

Directions

Cut the beef into 4 equal pieces. Put the pieces between plastic wrap and pound out, with the textured side of a meat mallet, to 1/4-inch thick. Put the meat into a shallow glass or plastic dish, cover with the buttermilk, turning to coat. Set aside while you prepare the dredging station.

In a large baking dish, add the flour and season with salt and pepper, to taste. In a second dish, whisk eggs and milk together. In the third dish, combine the crushed crackers and the panko.

Preheat the oven to 250 degrees F. Fit a baking sheet with a rack.

Remove the steaks from the buttermilk, then dip each piece in the flour to coat, shaking off the excess flour. Next, coat them in the egg, then dip them in the cracker and panko mixture, lightly pressing the crumbs into the steak. Set the steaks set aside to rest for 10 minutes.

Heat the canola oil in large nonstick skillet over high heat. When oil is shimmering, add the steaks, 1 at a time, and cook for 3 minutes on first side, 2 to 3 minutes on second side, or until cooked through. Repeat with remaining steaks. As you finish, blot the excess oil on a paper towel, then transfer the steaks to a baking sheet, and keep warm in a low oven.
